Free Range chickens

 
     Free range chickens...  I wouldn't have it any other way.  Having the ladies roam the yard is heartwarming to me.  Each one has their own "routine and quirks" which all add to their individual personalities.  They all know where the coop is and instinctively return to it every night.  They are welcome to go where ever they want.  Nowhere is off limits.  They do like the garden, the deck, outdoor furniture and the tall grass around the house. "Land mines" are all in the package, but hey... it's great fertilizer!
There is obviously the threat of predation.  I've probably lost about 1/3rd to racoons, dogs, or hawks.  That's been hard, but a it's part of nature's way and I've learned to take a few measures to prevent future incidents.  The door of the coop is always closed except when gathering eggs or cleaning the coop.  I leave a window open year round and the girls fly up to get into it to lay eggs or roost at night.  There are a couple "goof balls" that have their own sleeping spots.

 So in a nutshell...  I'm loving the free range philosophy...  Chickens are a blessing...

Venison chili

I absolutely love chili and bowhunting so...  venison chili seems like the perfect combination!  This chili recipe is requested for poker games, wild game cookouts, and beer drinking afternoons by my buddies.   I  like large onion slices.  My youngest son likes them large so he can pick them out.  To each their own.
Ingredients:  
2 lbs ground venison
1/2 package of bacon
2 onions
1 large can of hot chili beans
1 small can of kidney beans
1 large can of diced tomato
chili powder
1 jalapeno  (2 is better for me)
1 hot chili pepper
red pepper flakes
cook bacon until slightly crispy

Remove bacon and set aside.  Leave grease to cook venison in.
Brown venison and add 2 tbs of chili powder. ( I also like to add minced garlic)
While venison is browning,  slice onions and diced jalapeno and chili pepper
add tomato, beans, onions, jalapeno and chili pepper
simmer 20 minutes.  add salt, pepper and chili powder to taste
Add cheese and devour...

Portugese Kale soup



2 tablespoons olive oil
   1 pound chorizo sausage 
3 quarts chicken stock
 2 cups chopped onion  
1 cup diced celery       
  1 cup diced carrots        
 4 cups shredded Kale   
                          2 tablespoons chopped or minced garlic 
                            A large pinch of crushed red pepper flakes
     2 small cans of baby clams
(confession:  the whole cloves shouldn't be in the picture... one too many budweisers while cooking )

Heat olive oil, add chorizo and cook 4 minutes
